Simple Ghee Rice

This recipe is so simple and so tasty. Here is how we make it.







Rice - 1 cup , cook and keep aside
cloves 1-2
Cardomom - 2
Cinnamon -  1 -1.5 " stick 
Ghee 2-3 table spoon 
Shallots - 2 -3 sliced
Dry red Chillies - 2-3
Curry leaves - fresh a handful
Salt


1) Cook rice with little salt and keep aside.
2) Heat the kadai, pour ghee, add the spices, shallot slices, curry leaves, dry red chillies and sauté well. ( this gives a beautiful aroma )
3) Add the cooked rice, stir well, let it coat well with the ghee and spices flavor. Check salt. 
4) Add some fried onions ( optional)

Pasta with Tomato Cream Sauce

This recipe is a winner ! Kids will love it no doubt. I wish I could record all the praises what my kiddos showered on me while eating this. This is a recipe from the Pioneer Woman. I followed the recipe word to word.  I discuss about the recipe, its source and the ingredients to my kiddos while they eat, when I told them that this is Pioneer Woman's recipe, my 8 year old told something which makes me smile every time I think of it. She said, "Amma, this recipe is awesome , the Pioneer woman is the second best cook in the world. First is always you "... :-)  :-0 :-) .... How sweet my darling K <3




Will go to the recipe

Pasta 12 ounces ( fettuccine or linguine)
2 tablespoons olive oil
2 tablespoons butter
1 medium onion finely diced
4 garlic cloves minced
1 bottle of Pasta sauce
salt and Pepper to taste
Dash of sugar to taste
1 cup heavy cream
1/2 cup grated Parmesan
Chopped Fresh Basil


1. Cook the Pasta
2. Meanwhile heat olive oil and butter in a skillet. Add the onions and garlic till onion is translucent.
Pour in the Pasta sauce, salt, pepper sugar.
3. Then add the heavy cream and stir.
4. Add the grated Parmesan into the sauce.
5. Drain the Pasta and add the Pasta on top of the sauce.
6.Toss the Pasta and the sauce , if it is too thick add some of the Pasta water.
7.Before serving add the chopped fresh Basic.
8. Serve it Hot ! After that go exercise ! <3

Pitta Pizza

Pitta Pizza.... its a Saturday Nights thingy !!! Specially when you are sitting with kiddos and enjoying  a family movie time

Just throwing some ingredients together in the oven... will get you this perfecto disho for a Saturday Nighto !!!


Pita Bread
Pizza Sauce
Mozzarella Cheese
Sharp Cheddar Cheese
Olives
Assorted Peppers

Basically any other topping you want : Mushrooms Hard Salami, Bacon, Meat balls, sausages ... whatever comes you way, put it on top of the Pitta and enjoy your Pitta Pizza Saturday Movie night !!!

PS. Bake in a Preheated oven at 425 Degrees F, will cheese melts . Add only pre-cooked meat !!!

Parmesan Sesame Chicken Strips

These are so easy and so yummy ! The recipe calls for Ritz Crackers as the outer coating and I thought that was a joke until I tried them ! Its truly out of the world ! And I think I am going to buy some more Ritz crackers just to use them for more recipes !

This whole thing takes just 30 minutes to make...

Here's what you need...

25-30 Ritz crackers
1 cup mayonnaise
1/4 cup sesame seeds
1/4 cup grated Parmesan cheese
4 boneless skinless chicken breasts
Pepper - 1 teaspoon
Salt - go easy on the salt, as the Ritz crackers already have salt in them.

Preheat oven to 425 degree F.
Keep the baking tray ready by spraying some nonstick cooking spray
Cut the chicken breast into long strips.
Marinate them with a little salt and needed pepper.
Place the crackers in a ziplock bag or any plastic bag and crush them with a rolling pin until they are fine crumbs ( I love doing this part ;) )
In one bowl have the mayonnaise, and in another bowl, mix the crackers, parmesan cheese and sesame seeds.
Dip the chicken strips into the mayonnaise and then the crumb mixture.
Spread them on the baking tray and bake for 15-20 minutes.

Enjoy it hot with some ketchup or some honey mustard !

Meatball Marinara



How to make them...

Have some hotdog buns ready at home.
Meatballs either store bought or pre-made.
Then its all about assembling them together and baking at 325 degrees F for 5-7 minutes or till the cheese melts.
Place the meatballs in the hotdog bun, add, marinara or any Pasta sauce, add some parmesan cheese and bake.

It can't be easier... let the kiddos enjoy ;)

Grilled Panini with meatballs, teriyaki Sauce , bell peppers and onions







Roasted Capsicum & onions in Teriyaki Sauce with meatballs, served with some lettuce over grilled Panini smile emoticon


This is so simple...here is how you do it...
Ingredients

Meatballs ( used the ones from Costco , I'll be posting a recipe on how to make it at home )
Slice your Bell Peppers lengthwise ( Used Red and Orange )
1 Large onion
Teriyaki Sauce
Chop Romaine Lettuce or any lettuce that you have
Pre- grilled Panini ( Use any flat bread , whatever is available , Chappathi's , tortillas, naan, whatever you have in your kitchen )
Make the egg, if you would like it have it.

Method :

Drizzle Olive Oil oil on a skillet
Add the sliced bell peppers and onions
Saute well
Add the teriyaki Sauce - a splash, I added around 2-3 table spoons
Continue Sautéing
To the peppers and onions ,add the meatballs that you heated in the microwave .
I heated my paninis in the toaster oven, you can also do it on a normal pan.

Assemble everything you have just made on a plate and enjoy !!!
