Buffalo Chicken wings

So simple, So tasty, you don't have to run to the stores to buy them. Just stock some wings in your freezer, when you are in a mood to eat 'em. Cook 'em and enjoy Homemade Buffalo Chicken Wings !!! Crispy and Hot !!!





Canola Oil for frying
Chicken wings 12 ( separate them into two )
Frank's hot pepper sauce ( around 1/2 cup or more )
1/2 cup butter
Several dashes of Worcestershire sauce


Preheat oven to 325 degree F.
Heat Canola oil in a deep frying pan.
Fry the chicken wings in batches till they are golden brown and fully cooked
 ( roughly 5 minutes)
In a saucepan, heat the Franks hot pepper sauce and butter over medium heat. Then add the Worcestershire sauce and Tobasco sauce. Once it bubbles switch off.
Place the wings in an ovenproof dish and pour hot sauce over the top.Coat well and bake for 15 minutes.

Oven Baked Chicken Wings - Nadan Style

Chicken Wings are the best !!! Love 'em ... you can't stop with one.... Made it in a nadan style last week, t'was so good...




it is very simple to make.

Marinate the chicken wings with the following ingredients. Adjust the ingredients to suit your taste.
Bake them at 400 degree F for 45 minutes, or till the chicken is cooked and the skin is crispy.

Chilli powder
Tumeric Powder
Garam Masala Powder
Coriander powder
Ginger garlic paste
Lemon Juice
Salt
Black Pepper powder


Marinate them well, Bake and enjoy them hot while you can still hear the crunch sound while biting into the skin.

Crispy Oven Baked Buffalo Chicken Wings

I had some chicken wings in my freezer and I was wondering what to do with them. I have already posted here two excellent recipes with chicken wings, Classic Hot wings and Caramelized chicken wings, so I didn't want to try the same thing. I came across so many recipes, which asked for first frying the wings and then baking them with the sauce. I didn't want to do the frying part, because as it is, the wings are very fatty and frying them again in oil was a BIG NO for me. Thats when I came across this recipe which is totally oven baked and at the same time very crispy too. The skin is so crisply that its hard to believe that the wings aren't deep fried. This recipe also calls for tossing the wings in baking powder, which makes the skin crisp as the moisture is drawn to the surface of the skin. The recipe also asks us to bake the wings at low temperature first, which helps in melting the fat under the skin, which means less calories !!! Yes, thats exactly what I wanted , tasty food, less calories and easy to make.




Ingredients

10-15 wings
2 tablespoon baking powder
Salt - to taste
Pepper - to taste

To make the sauce

4 tablespoon unsalted butter
1/2 cup Frank's Original Red Hot sauce
1-2 tablespoon brown sugar.

1) Wash the wings and pat them dry with a kitchen towel.
2) Preheat oven to 250 degree F / 120 degree C .
3) Toss them in a ziplock bag with the baking powder, salt and pepper.
4) Spread them in a layer on the baking tray sprayed with some oil. Bake them for 30 minutes on the lower rack of the oven.
5) Turn the oven temperature up to 425 degree F / 220 degree C. Bake them for 40-50 minutes on the higher rack, Rotate the tray halfway through, no need to turn the wings.
6) When they are golden brown and the skin is crispy, they are done. Take them out of the oven and toss the sauce over it. Enjoy it with some Blue Cheese Dip and celery !!!


Blue Cheese Dip

1 cup mayo
3/4 cup sour cream
1 heaping cup blue cheese crumbles
5-6 dashes of Worcestershire sauce
Salt and Black pepper to taste

Whisk together everything till you get a nice creamy consistency.

Simple Egg Drop Soup

There is no doubt that this is the best recipe for egg drop soup that you have come across. Its so simple. If you have the chicken stock ready, it takes hardly 5-7 minutes to make this soup.





Ingredients

2 tablespoons cornstarch
3 - 4  tablespoons of water.
1 3/4 - 2 cups of home made chicken stock
1 cup of water
1 tomato - small diced
Pepper - according to taste
Salt to taste
2 large eggs beaten


1. Mix the cornstarch with the water, make sure there are no lumps.
2. Bring the chicken broth and water to boil. Add the tomato, pepper and salt. Add the cornstarch mixture. Once it thickens switch off the heat.
3. Swirl the beaten eggs into the soup, stir three times with a fork and cover the pot with its lid for 2-3 minutes. The eggs should be cooked and will form silken threads ( look at the pic below).

Serve it hot !






Sweet Corn and Chicken Soup


You will fall in love with this soup. This recipe is definitely a winner !

Ingredients

2 tablespoons cornstarch
3 table spoons water
6 oz ground chicken
1 3/4 cups Homemade Chicken Stock
1 1/2 cup water
1 can creamy sweet corn
white pepper ( according to taste)
salt to taste
2 large eggs, lightly beaten
Coriander leaves to garnish


1. Mix cornstarch with 3 tablespoons of water in a bowl. Stir well to blend.
2. Bring the chicken broth and water to boil, Lower the heat to medium and  add the ground chicken.
3. Add the creamy sweet corn, pepper, salt and thicken the soup with cornstarch mixture. Turn off the heat.
4. Swirl the beaten eggs into the soup and immediately stir three times with a fork. Cover the pot of soup with its lid for 2 minutes. The eggs should be cooked and will form into silken threads.

Serve Hot !


To make creamy sweet corn at home:

1) Take a sauce pan, drop the frozen corn into it, with a cup of half and half or milk, stir well, it becomes thick. Take 2 tablespoons of cornstarch and mix it with 3 tablespoons of cold water and stir till it blends well. 
2) Add the cornstarch mixture to the pan in which the corn is cooking. Stir well , switch off.




How to make homemade chicken stock:

1 cornish hen or a 1 kg regular chicken
2.25 litres of water
2" piece of ginger ( crushed on pester mortar)
Salt - to taste
Pepper - to taste

1) If you are using a slow cooker, cook it on high for 4-5 hours. you can do it in a pressure cooker or a stock pot.

2) When its done, let it cool, drain the chicken stock with a strainer.

Chicken tikka with Pitta Bread and Hummus

Such a quick, tasty and easy lunch / dinner.








Clean the cut chicken pieces well. Pat them dry and marinate them with the following.

Chicken pieces 10-12 pieces ( look at pic below)
Chilli Powder - 1 table spoon
Coriander Powder - 1 table spoon
Tumeric Powder - 1 teaspoon
Garam Masala Powder - 1 teaspoon
Pepper Powder - 1/2 -1 teaspoon
Lemon Juice - Juice of  l lemon
Yogurt - 3-4 tablespoon
Salt - to taste

Mariante and keep aside at least for 2 hours.
Preheat oven to 400 degree F. Bake for 1 hour or more until cooked.
Half way through , drain the oil off and turn the pieces and continue baking.

Enjoy this hot with some Pitta bread and Hummus dipping . Its really Yummm!

Classic Hot Wings

This one again I got it from the Pioneer Woman's book. It looked so yummy and easy and I tried it... and it was sooooooooo good !!!!




Do you like Chicken Wings ? Yes ? - then Proceed  No? --that cannot be true... it should be yes !
Do you like it Spicy ? Yes another reason to go ahead

Then, lets not waste any time, let me go straight into the recipe... You have to have to have to try this one !!!

Canola Oil for frying

Caramelized Chicken Wings




Such a great starters for any party or even a Friday movie night. I absolutely loved it and so did my kiddos.

This is what you need.

3 lbs Chicken Wings
2 tablespoon Olive Oil
1/2 cup Soy sauce
2 tablespoon Ketchup
1 cup Honey
1 garlic Clove, minced
1 pinch salt.
1 pinch ground pepper

Preheat oven to 375 degree F.
Place chicken wings in a baking dish, spread them in a single layer.
Mix the oil, soy sauce, ketchup, honey, garlic, salt , pepper and pour over the chicken wings.
Bake at 375 degree for 1 hour and  the sauce is caramelized.






Gobi 65 (Cauliflower)



What's the story behind the number 65 ? Why not 64 or 66 ? I remember reading it somewhere, can't recollect it now.... Anyways, they are good veggie starters ... Try it and have it hot and enjoy the taste & crunchiness :-)

Cauliflower florets blanched ( take a nice big cauliflower )
Chilli powder - tablespoons
salt to taste
Cumin powder - 1 teaspoon
garlic powder or (garlic paste- a teaspoon)
The ratio of maida ( all purpose flour) to corn flour is 4:1
Yogurt - 1-2 table spoon
Oil - for deep frying

Make a nice thick batter with the above.
Please taste the batter to see if you got the taste that you are looking for. Make adjustments.
Add a pinch of food color if you think you would like the look and marinate for at least 2 hours.
Fry it in medium hot flame.
Enjoy it alone or with the company of some rice and rasam ;)

Chicken Salad in Lettuce leaves


I saw this recipe on Facebook the other day. It is almost a copy cat recipe from cleanfoodcrush. 
Rather than serving a salad the normal way. I think this really is a good one, it looks better on the table and tastes better in your mouth. So, go ahead and try this one. 




2 Chicken breast cooked with salt and pepper.( I just put them in the crockpot the previous night.)
celery sticks thinly chopped
10-15  cup seedless red grapes
1/2 a red onion chopped tiny
1/2 cup plain greek yogurt
1 tsp dijon mustard ( I used honey mustard )
1 splash hot sauce, such as tobacco (optional_
Combine gently, cover, & leave it in the refrigerator for at least an hour.
Serve on butter lettuce leaves or Iceberg lettuce ( I used Iceberg)
Sprinkle with green onions & sliced almonds

Parmesan Sesame Chicken Strips

These are so easy and so yummy ! The recipe calls for Ritz Crackers as the outer coating and I thought that was a joke until I tried them ! Its truly out of the world ! And I think I am going to buy some more Ritz crackers just to use them for more recipes !

This whole thing takes just 30 minutes to make...

Here's what you need...

25-30 Ritz crackers
1 cup mayonnaise
1/4 cup sesame seeds
1/4 cup grated Parmesan cheese
4 boneless skinless chicken breasts
Pepper - 1 teaspoon
Salt - go easy on the salt, as the Ritz crackers already have salt in them.

Preheat oven to 425 degree F.
Keep the baking tray ready by spraying some nonstick cooking spray
Cut the chicken breast into long strips.
Marinate them with a little salt and needed pepper.
Place the crackers in a ziplock bag or any plastic bag and crush them with a rolling pin until they are fine crumbs ( I love doing this part ;) )
In one bowl have the mayonnaise, and in another bowl, mix the crackers, parmesan cheese and sesame seeds.
Dip the chicken strips into the mayonnaise and then the crumb mixture.
Spread them on the baking tray and bake for 15-20 minutes.

Enjoy it hot with some ketchup or some honey mustard !

Chicken Cutlet

Chicken breast - 2 slices
Onion - 2 medium, chopped
Green chillies - 2-3
Curry Leaves - 10-12 leaves , chopped
Ginger, Garlic - 1 tablespoon, chopped
Potato - 1 large
Cornflour
Breadcrumbs
Egg white - 1
Salt - to taste
Pepper - 1/4 teaspoon
Oil - 1 cup



Method

1) Cook the chicken breast with salt and pepper. After it cools, grind it in a food processor.

2) Meanwhile, boil the potato and keep aside.

3) Heat 2 tablespoons of oil in a pan and sauté the onions, green chillies, ginger, garlic and curry leaves.

4) Add the chicken minced and sauté, check salt.Switch off flame.

5) Add the mash potatoes and make balls. By first dipping them in cornflour, then in egg white and finally in breadcrumbs.

6) Heat a cup of oil in a kadai. When the oil is really hot, add the cutlets gently and fry them in medium flame.

Vegetable Cutlet

This is my Amma's recipe. I don't know what magic she does, but she makes it so tasty. This is an excellent way to get even kids who dislike vegetables to eat them and they will enjoy it no doubt !




Vegetable Cutlets
( Cabbage, Carrots, Potatoes, Vazha Poovu )


Recipe
Cabbage - 1/2 of a medium sized one
Carrot - 2 medium sized
Vazha poovu - 1/2 of a medium sized one or a small one
Potatoes - 2 large
Onion - 3-4 medium
Ginger - 1 table spoon ( Chopped , really small )
Garlic - 3 - 4 cloves ( Chopped really small)
Curry leaves - chopped really small
Salt - to taste
Egg - 1 , Seprate the yolk and the white
Corn Flour - 4-5 table spoon
Bread crumbs
Oil
Story...
Chop the carrot and Cabbage, its should be small, I use a food processor , it gets done easy.
Chop Vazha poovu also really small
Boil Potatoes meanwhile, and when its cooked, remove the skin and mash
Heat Oil, add the onions, ginger and garlic to it and sauté, add curry leaves.
Add the chopped, cabbage, carrot and vazha poovu and sauté.
There should be no water content remaining, till then sauté
Switch off.
Take the boiled potatoes and the egg yoke and mix it with the sauté vegetables . Make round balls.
Heat 2-3 cups of oil on the kadai.
Dip the balls first in corn flour , then in beaten egg white and then in breadcrumbs.
When the oil is hot. Start frying the cutlets, in medium heat.

Easy Parmesan Rolls

3 Ingredient Easy Parmesan Rolls 
                                                 ( tried the recipe from the Six Sister's stuff )

1/4 cup Butter
1/2 cup grated Parmesan Cheese
8 Rise and bake Frozen Rolls ( they suggested Rhodes, I used Crescent Rolls as that what I had in my fridge and its still came out very good )


Microwave butter until completely melted.
Place grated parmesan in a separate bowl. ( Look at the next pic )
Dip each frozen ball in butter and then roll it in grated Parmesan Cheese
Place on greased pan and allow to rise until it doubles in size and bake according to package instructions till the rolls are golden on top.

The kiddos will definitely enjoy this one !

Tuna Cutlets



Those are tuna cutlets. Made when my dear friend S visited. The simplest of all cutlets. Made with canned tuna. 


What you need

Canned tuna - 2 no.s
Onions - 2 medium
Ginger/Garlic - finely chopped 1 teaspoon ( i don't add too much else it will over power the taste of the tuna)
Green Chillies - 3 long ones finely chopped
Curry leaves - finely chopped
Potatoes - 2 medium sized
Egg yolk - 1 used during binding
Egg white - 2 , used for making the outer layer
Breadcrumbs
Salt
Oil
