This butter chicken is the official food for my son J . Naan and Butter chicken. Rice and Butter chicken. Anything with Butter chicken, goes down without any fuss and with ease :-). So, whenever I make this dish, I keep thinking of the smile on his face and that's what stops me from getting bored of making this over and over again.
So, here is how I do it. I have tried and tested this a million times, and I think we love it best this way. :-)
Some tips, go easy on the ginger garlic. We don't want it to over power the dish. Corriander powder again, keep it low. Just make it simple and enjoy the taste of Chicken with some butter and Kasoori Methi, after all they are the stars of this show !
Ingredients:
Chicken 3 lb ( cut to bite size pieces )
Garlic - 1 table spoon
Ginger- 1 table spoon
1 cup chopped onion.
2 tomatoes - roughly chopped
cumin seeds - 1 teaspoon
tumeric powder - 1 teaspoon
Chilli powder 2 tablespoon
Corriander powder 1 tablepoon
Green Chillies - 2-3 slit
Cashewnuts 7-8
Kasoori Methi - 2 tablespoons
Salt to taste
Brown Sugar - 1 tablespoon
Heavy Cream - 3-4 tablespoons
For marination:
Marinate the chicken with some salt, 1/2 teaspoon turmeric powder, 1 teaspoon chilli powder, 1 teaspoon coriander powder, 1 tablespoon yogurt, 1/2 teaspoon pepper powder.
How I make it....
Mariante the chicken and keep it for 2-3 hours.
Slightly shallow fry the pieces in batches.
In the same oil that you shallow fried the chicken, add jeera, chopped onions, chopped ginger garlic , green chillies, tomatoes, turmeric powder, chili powder, coriander powder and cook well till oil clears on top.
Add cashews.
Add Kasoori methi.
Salt
Once the gravy is cooked. Let it cool and blend it into a smooth consistency in the blender.
Add it back into the pan, add the sugar and check if the taste is kind of balanced. You don't want it to be too tangy or sweet. Add the garam masala powder.
Add the chicken pieces. Let it cook.
Towards the end, add the cream and switch off.
I don't add color unless I have a guest eating with us.
Enjoy this with Rotis, or Naan or ghee Rice, or even plain rice. You can never go wrong with this dish :-)
