Chicken Pitta Pockets

Chicken Salad in Pitta Pockets

Cook boneless chicken with some pepper and salt until tender
Rest of it is all about chopping some onions, cucumbers, lettuce, carrots, bell peppers, olives to bite size portions and add some mayonnaise and some lemon juice and mix well together with the cooked chicken. Chicken Salad is ready !

Fill your Pita Pockets with the chicken salad. Take for lunch to work smile emoticon Enjoy some healthy food smile emoticon .

Note: You can substitute the mayo with any other dressing of your choice.



There is a story behind this chicken pitta pockets. We planned for a quick picnic at the park with a couple of our friends. So, one of the friends picked up the croissant chicken salad from Costco, another friend she made some really good Jumbalaya and sticky chicken wings. That was the first time I was eating Jumbalaya...Wow !!! (it was out of this world). And I made these chicken pita pockets. The pita pockets I got them from Harris Teeter and all I had to fix was the salad.
