All I can is this is a must try ! This is so good. Tomato Rice goes best with potato fry. I'll soon be posting an awesome recipe for the potato fry that goes well with this tomato rice, Pulli Sadam, or Rasam Sadam.... Is there anyone who does not like potato mezhukkuvaraty... yes there is... that would be me ! I have eaten it from different places cooked in different ways. But I still was not a great fan of potato fry until Indu aunty gave me this recipe. Now, it gets over by the time I finish frying the whole thing ;) ... Wait, so were we discussing Tomato rice or Potato fry ? ... Ah yes, tomato rice it is... So, what I came to tell was, if you make tomato rice, please make sure you try out Induaunty's special potato fry with it. So lets get started.
Tomato Rice :
Cook 2 cups of basmati rice and keep aside
Ghee/Oil - 1-2 table spoon
Dry red chillies - 2-3
mustard seeds - 1 teaspoon
Cumin - 1 teaspoon
Channa dhal - 1 table spoon
Urad dhal - 1 table spoon
Broken cashews - a handful
Chopped ginger - 1/2 teaspoon
Chopped green chillies - 2
Curry leaves - 1 sprig
Onion - 1 medium chopped
tomatoes- 2 large
Red chilli powder - 1/4 tsp
Hing - a pinch ( I add a little more than a pinch )
Garam masala - a pinch
Salt
Heat oil/ghee in a large open mouth kadai ( makes it easy to stir later on when you add rice )
Add mustard allow it to splutter.
Add cumin seeds, dry red chillies, urad dhal, chenna dhal, cashews. Give a quick sauté.
Add the chopped onions, curry leaves sauté till onions. becomes translucent
Add green chillies, ginger, hing. Saute
Add the tomatoes. Add salt. Let it cook in low flame. Add chilli powder and garam masala.
Switch off when oil/ghee clears on top.
After it cools mix it with the rice. Stir without mashing up the rice. Enjoy it with the potato fry !!!
